Two of my favorite breakfast items is french toast and blueberry muffins. So when asked to create an original recipe using Little Bites Blueberry Muffins I thought what if I combined my 2 favorite things? So using some cream cheese and the Little Bites Blueberry muffins I created a delicious filling for some stuffed french toast- yum, yum!
French Toast Topped with “Little Bites Blueberry Muffins”
Ingredients:
- Little Bites Stuffed Muffins (I used 2 packages from the box)
- 1 cup of milk
- 8oz of cream cheese
- Bread
- Eggs
- Butter
Preparation
In a bowl combine a half cup milk and cream cheese. Crumble the Little Bites Blueberry muffins into little bits and stir into the bowl. Combine well.
In another bowl whip up about 3 eggs and the remaining 1/2 cup of milk.
Dip bread into the egg mixture and fry in a pan. When the french toast is browned to your liking top with the cream cheese and blueberry muffin mixture.
Cover the pan for about a minute to allow the cream cheese mixture to warm Cause there is nothing better than warmed blueberries!
