I made a big batch of yummy sugar cookies with blueberries and the girls gobbled them up and dipped them into their milk and sipped it. It made for a perfect summer Sunday afternoon snack! The berries in it give the cookies a nice fresh sweet taste that I think makes them a great summer sugar cookie.
They are delicious and very easy to make! If you’re short on time you can swap out a homemade sugar cookie batter for boxed. I made them from scratch and here is my recipe.
Chewy Blueberry Sugar Cookies
- 1 cup (2 sticks) butter, softened
- 1½ cups granulated sugar
- 1 egg
- 2¼ cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon vanilla
- Preheat the oven to 350º F. Line the cookie sheets with parchment paper or a nonstick baking mat.
- Combine the butter, sugar and mix them together until they are light and fluffy, about 3 minutes. Add egg and mix until they are will combined.
- Stir in flour, baking powder, salt and vanilla. Mix until they are well combined.
- Use a spoon to scoop out dough and roll into a ball.
- Place cookies on cookie sheet about 2 inches apart
- Bake 8 to 10 minutes or until lightly browned.
